I can tell I am definitely a mom of boys, because as soon as I typed out “balls” I started giggling to myself.
I’ve been trying to eat better these last few months and one thing is crystal clear: if it’s not convenient, I’ll fail. If I can’t pull it out of the fridge or the cupboard and throw it in my gym bag, the next thing I know I’m in line at Jack in the Box. I hate it when that happens. In a perfect world I would do Meal Prep every Sunday. And now that Downton Abbey is over, that may happen.
But for now, I found these Protein Energy Balls on Pinterest. They’re a quick snack that’s easy to make and also helps satisfy that sweet tooth.
And there’s only 4 ingredients. That’s right. FOUR.
2 Cups Old Fashioned Oats
1/2 Cup Almond Butter
6 Tablespoons Honey
4 Tablespoons Dark Chocolate Chips
And as if they if the 4 ingredients weren’t easy enough, you throw it all into a bowl and mix it together.
*Disclaimer: that’s Trenton’s hand pouring the honey in. My arms are not that hairy.*
After it’s all mixed together, roll into small balls (hehehe) and chill in the refrigerator for about 15 minutes.
And there ya go! A yummy little snack for days that you’re on the go. I don’t recommend throwing them into your purse without a Ziploc bag though.
They’re kinda sticky. 🙂
