We are gearing up for a FULL week here at the Jones house. Not only do I have a meeting every night this week, but I’m also flying over to Spokane for 17 hours on Friday for a quick work meeting.
It’s around this time of the year that I have to start taking it one day at a time. Only think 24 hours ahead. Because if I start thinking farther ahead then 24 hours, I start to stress out and end up curled up in my bed, in the fetal position, chewing on my hair.
This weeks meals are all really simple and easy to make. Except for the Caramel Chicken, which again, came from The Recipe Critic. She is fast becoming my new favorite person.
